Welcome to Cold Waters Tactics, this is Captain Chang. Here, I will go over the overall preparations, general strategies going into a mission, and how to execute specific tactics to defeat your enemies.
Today's scenario: The Duel, SSN vs SSN, circa 1984
If you're taking the 688 (aka Los Angeles-class) you'll probably face a Victor III, but you may also face Sierra or other attack boats.
Before you enter the scenario, it is important to load a MOSS decoy in one of the tubes... for emergencies. And read the conditions carefully, note any thermal layers and YOUR depth.
Immediately after you enter the scenario, go silent running, and deploy towed array if you are able to. Then check sea floor (you need to know how much vertical room you have), and where is the thermal layer (if any). If you are in a "strong duct" or "medium duct", you may want to get on the other side of the thermal layer.
Your TOP priority is to stay away from any hostiles by at least 15 km. If they seem closer, turn away, go deeper, and go 10 kt or even 15 kt and open the distance. Or reduce speed and slow the closure rate.
Your next priority is to detect and classify EVERY contact you hear on the map. You may have to go above the thermal layer (barely) and/or deploy towed array to do this, and by turning your broadside to the enemy so you get a better solution. Try different depths as signals propagate differently.
Do NOT trust the range given if the solution is less than 70%.
You need at least 15 if not 20 km to execute the dogleg torpedo manuever properly. The basic idea behind the "dogleg" is to NOT shoot the torpedo directly at your target, but to shoot it BEHIND you at a 30 to 40 degree angle, let them go 4-10 km, then turn them toward the enemy. You need this leg to happen BEYOND the enemy sensor range... So once you turn the torpedoes toward the enemy, and they detect the torpedo, they will shoot at the torpedo, and those torpedoes will not come anywhere NEAR you.

The reason we need 15-20 km is we do NOT want to be detected by our target, esp. by active sonar. And we need the torpedo to turn BEFORE they enter target's sensor range.
Once you got the torpedo(es) to the enemy it's a matter of guiding it in and forcing it to reject the noisemakers. There is no need to go into the 3D view, but I admit it does look cool.
Go into the environment view (the one that shows depth sea floor, thermal layer, etc.) and once you select the torpedo and the enemy contact, you can see where is the torpedo depth relative to the enemy contact. Try to put them at approximately the same level using manual controls. Should be 8/5 on the numpad. If you cannot control the torpedo, make sure wire is still intact, and torpedo is activated (hit 4 on the top number row). (1 changes torpedo's sensor mode, active/pasive, 2 is the travel path (straight, left turn, right turn, snake (not all torpedoes have all options), and 3 is the auto-depth setting (traveling above or below layer, some have deep/anti-sub mode). Set 3 to the appropriate mode. Then use the main map (or the minimap) to turn the torpedo toward the enemy contact. Know your torpedo's sensor range (for Mk 48, it's almost 2 km) and activate when enemy is in the sensor cone. Then use left/right and depth control to guide the torpedo in.
If your torpedo is distracted by noisemaker, turn AWAY from the noise maker, get the noisemaker on the edge of the sensor cone for 5 seconds, then turn back toward the target.
Keep in mind the range will fluctuate as the water condition gets chaotic. You knew where the target was, so just keep seeking around that area.
Repeat until enemy is hit and sunk.
